A Mama's Recipe

Trying new recipes is something I enjoy doing. I frequently receive magazines with new recipes that I usually try. I want to start sharing those recipes with you.
I am all about saving time in the kitchen! Who wants to stay in the kitchen for 3 hours preparing a meal?! Not I. Therefore, most of the meals I prepare are quick. The one below takes about 25 minutes. If you enjoy Italian flavored food than you need to try this recipe.
Zucchini & Sausage

Ingredients:
2 small zucchini,cut 1/8-inch slices
1 small onion,chopped
1/2 cup chopped green pepper
2 tbspn olive oil
1 Ib smoked kielbasa or Polish sausage, halved lengthwise & cut into 1/2-inch slices
1 can (15-1/4 oz)whole kernel corn,drained
1 can (8 oz)tomato sauce
2 tspn Italian seasoning
1/8 tspn crushed red pepper flakes

Directions:In a large skillet, saute the zucchini, onion and green pepper in oil until tender. Stir in the remaining ingredients;cook until heated through. Cornbread makes a great side! Enjoy!
